Introduction
A growing interest in the impact of nutrition on health, combined with improved research methods, has enabled scientists to look more closely at the health benefits of
foods. It is more apparent than ever that what we eat has a huge influence on our health, and strong links between poor diet and many serious diseases have been made.
We now know that there is a strong link between poor nutrition and both cancer and heart disease. Numerous studies have revealed that food is much more than fuel; many foods are believed to have great health benefits and therapeutic properties, while others can have negative effects. With this knowledge we now have the opportunity to follow the healthiest possible diet.
A Natural Pharmacy One of the most exciting developments in recent years has been the discovery of plant compounds called phytochemicals. which are found in vegetables, fruit, grains, nuts and seeds. There are literally thousands of these naturally occurring compounds and. although research is stili at an early stage, many scientists suggest that these chemicals could offer a staggering range of health benefits. Phytochemicals are believed to offer
protection against some kinds of cancer, heart disease, cataracts, osteoporosis, diabetes and strokes.
Eating more fruit and vegetables is not difficult, yet this simple step is seen as one of the most positive ways of promoting good health. It may even be more important than reducing our intake of saturated fats and processed foods, although this still remains high on the agenda. The presence of phytochemicals -and their benefits - has been hailed as a major nutritional discovery, and we are likely to hear a great deal more about their importance to our health and general well-being in the future.
Pollution and Stress In a world that is becoming increasingly polluted, and where individuals are subject to more and more stress, it is all too easy for our bodies to become out of kilter, and for normal bodily functions and
processes to be disrupted. Researchers are particularly interested in the role of essential fatty acids, especially those found in oily fish and antioxidants (compounds which help to reduce cell damage).
Antioxidant compounds, such as betacarotene. vitamins C and E. selenium and zinc, to name but a few. are found in fruit and vegetables, as well as wholegrain cereals, nuts, pulses and seeds. As with phytochemicals. it is thought that these antioxidants can reduce the risks of. and fight against, many ofthe major diseases that affect people in the West. According to certain experts, antioxidants may, in some instances, be even more efficacious than drugs. More research is being carried out all the time to increase our knowledge and understanding of this area.
